Brats, burgers, chicken, repeat… They are wonderful staples of the grilling seasons, but there is a sleeper in the crowd – and they are versitile and oh so easy. We love easy. Try frozen meatballs for your next party! You can find them in the freezer section of most grocery stores. There are a few brands, try them all – pick your favorite. I tend towards homestyle as I prefer the flavor. On the grill they form a nice crispy outer crust and stay moist on the inside.
Here I have paired them with fresh peppers and pineapple. I tried out new skewer “circles” - and a note of caution, the skewers become slippery quickly while putting the food on them. Watch those fingers!
Thaw the meatballs over night in the fridge or for a few minutes in the microwave before skewering. They don’t take long on the grill, maybe 3-4 minutes a side. Make sure if they are sharing a skewer with another food that it will be cooked in the same amount of time. This is why peppers were a good choice in this particular dish.
For sauce I used a sweet and sour sauce before grilling served with a hot asian mustard. I really liked how the peppers and meatballs came out but would opt to skip the pineapple in the future. Another sauce option would be italian salad dressing. That is a go-to fave of mine. Always reliable, it imparts a nice garlic flavor and helps keep the foods from sticking to the grill.
These would be great straight to the plate for a viewing party – or slide off the contents and make sandwiches. Portability is key! Since these can be assembled the night before a game and thrown into the cooler, they are awesome for tailgaiting. Your hungry fans will appreciate the healthful bites too.
