Summer heat, cool treat

This simple frozen pie will help your guests “chill out” at those hot summer parties!

You can whip this up in no time and there is plenty of room for creativity. The day before I plan to make this, I put the Cool Whip in the refrigerator to thaw and the condensed milk in to chill.

 

The ingredients are:

2/3 can Bacardi frozen drink mix – Pina colada, daiquiri, or margarita – (orange juice and other concentrates can work well too)

1 can sweetened condensed milk, chilled

1 tub cool whip, thawed

1 pre-made gram cracker pie crust

In a mixing bowl combine the drink mix, condensed milk and Cool Whip until smooth.

It should be the consistency of a milkshake.

Pour the mixture into the pie crust, smooth out the top and freeze for at least six hours.

The beauty of this recipe is that it is a good foundation recipe. In past pies I have added fresh strawberries to the daiquiri, crushed pineapple to the pina colada or lime zest to the margarita. You may also substitute most any  frozen concentrate. Pineapple-orange-banana juice will produce a delightful dreamcicle pie.

If you have the freezer space you can make all three in less than an hour! I know I’ll be taking a few to our 4th of July party. Do ask your host if they have room to keep them cold until serving.

** A note on the Bacardi mixes – if you wish to have the rum flavor of the original drinks you’ll want to use a tablespoon of rum extract as the real stuff won’t freeze.
