Game Day Food: Hillshire Farm Breakfast Burritos

Having an early game isn’t easy. I remember being at the Steelers vs. Broncos playoff game before the sun came up.  Burgers at 8am is just…weird. Not bad, but you can do some easy breakfast burritos made in advance instead. Hearty and rustic, great game day fuel.

We are big fans of sausage around the house, so I picked up these Hillshire Farm beef and jalapeno links. I thought beef looked good for a change. I chopped them into half slices and browned them with my Potatoes O’Brien so the potatoes soaked up the flavor. These have a serious kick of spicy. Not complaining at all, but do note that if you have some ‘no heat’ people in your crowd. I also tried the beef and bacon which was fantastic and would make a good alternative for a less spicy dish.

My husband really enjoyed the sausage – he had bought another brand last week and it wasn’t the texture he was hoping for. He said “I can tell these are made with better ingredients” which is a big endorsement from him. I feel confident passing them along to you too and I’m normally a fan of generic.

After I assembled my burritos, I double wrapped them in foil. They will go straight on a low heat grill for 10-15 minutes to heat them up. This crisps up the tortilla wonderfully so the outside is crunchy and the filling is hot and melty. I would take them out of the fridge or cooler for about 30 minutes to take the chill off before grilling.

This breakfast burrito recipe is quick and easy, makes about 10 burritos

1 package Hillshire Farm Gourmet Creations sausage

1 bag Potatoes O’brien (frozen section)

1 quart Egg Beaters (or similar)

1/4 cup no-heat jalapenos drained and chopped – Kroger also has these in the aisle with Mexican food items

1-2 cups shredded cheese blend (mexican, jack, etc)

1 package flour tortillas

 

Brown the sausage with the potatoes and jalapenos until the potatoes are cooked through – set aside.

Give your carton of egg a vigorous shake and cook them up scrambled style. (you may add pepper or flavor but there is plenty of salt in the dish naturally)

Add cooked eggs to potato mixture and stir them together.

Put a heaping scoop of the filling onto a large flour tortilla, add a healthy pinch of shredded cheese. Fold into a burrito. Wrap tightly in foil and refrigerate.

I had a few extra so I wrapped those in cling wrap and froze them. You can thaw them for later use, they keep very well in the freezer.

  2. This sounds great, Becky! For the burritos I would go with the beef and bacon but I think that the Italian with peppers and mozzerella sound really good!
