Tailgate Recipe: Gluten-Free Chicken Dijon on a Bed of Endive Spears

For the more demure football fan, this recipe is for you.  It is allergen-free for wheat, dairy, egg,  peanut, soy and tree-nut, and is gluten-free.  In addition, it is full of taste when all the flavors meld together.  This can be used as an appetizer/salad which is the perfect beginning to a fresh delicious dinner.  Chicken is a staple that can be used with varied ingredients and is enjoyed by many.  Try this light healthy alternative for your next football get together! Remember to always read all allergen statements on the ingredients you use.

 Chicken Dijon on a Bed of Endive Spears

Prep Time: 15 minutes  Cook Time: 30 minutes Serves 4

Dairy-Free, Egg- Free, Gluten-Free, Peanut-Free, Soy-Free, Tree-Nut Free

Ingredients:

1 pound boneless skinless breast, cooked (grilled, sautéed, or simmered) and diced

¼ pound red seedless grapes cut in half

1 can mandarin oranges, drained

8 endive spears washed and patted dry

Baby Greens

 

Dressing:

½ cup apple juice

2 teaspoons GF cider or champagne vinegar

1 tablespoon GF Dijon mustard

1 teaspoon honey

1 teaspoon tarragon, fresh or dried

Salt and pepper to taste

-Place diced breast in medium size bowl.  Set aside.

-In small mixing bowl place apple juice, vinegar, mustard and whisk until blended.  Add tarragon, S&P.

-Pour mixture over chicken breast add toss.  Add grapes and mandarin oranges and gently combine.

-Chill for 2 hours and serve on top of endive spears and baby greens.
